This is not completely accurate.

As of my latest testing here is how to perform the unlimited stamina trick.

A) Own a Mount

B) Have on at least 3% of out of combat move speed gear

C) Press the button for mounting and then immediately push/hold shift.

D) Now you can run around on your mount OR dismount and run around on foot with unlimited stamina.

Things that will cause it to stop: Any kind of combat (even taking your sword/bow out), horse attacks, talking to an NPC, zoning.
